Last month, my sister went on a week vacation to Greece - and it brought back so many amazing memories of my first time in Greece. It was the summer after graduating high school, and my family asked me to choose the destination. (What an honour!!) I had been dreaming of visiting Greece all throughout my high school career, after falling in love with the history of Ancient Greece. I wanted to see the ruins in Athens, wanted to experience the culture in Mykonos, and definitely wanted to bask in the sights and sunsets of Santorini.
So, off we went! And, it was everything I had hoped for and more.
As I FaceTimed my sister from some of our favourite spots in Greece, I was immediately inspired to make this Vegetarian Greek Salad Meal Prep. (After all, my sister’s been a vegetarian since childhood! And, it was only fitting that she'd be able to eat this meal prep, too.)
Since Greece was all about using fresh, raw, and flavourful local ingredients, I made sure that this was a simple prep that requires absolutely NO cooking - just a bit of chopping and additional prep-work to make the fresh tzatziki. You can realistically make this prep in under 1 hour, which OFFICIALLY makes this the easiest prep I’ve shared to date. (Woohoo!!)
It’s filled with lots of protein, healthy fats, and good-for-you nutrients and is bound to take you on a trip without having to leave the comfort of your own home. Try this prep out for a spin and let me know how it goes!
