Turkey & Quinoa Harvest Bowls

With Fall in full swing, I always love using the more savoury, harvest vegetables like kale, sweet potatoes, and brussels sprouts in my meal preps - along with all of the other ingredients that just fill you up and make you feel good. Because that’s what Fall is truly all about, am I right? It’s the season for enjoying all the warm, nutrient-rich, and high protein foods to keep you healthy and energetic throughout the colder winter season to come.
And that’s what these Turkey & Quinoa Harvest Bowls are all about.
The flavour combination of the turkey, quinoa & harvest veggies are kinda reminiscent of Thanksgiving leftovers, which is what really inspired this bowl. It’s perfect to take as a meal prep (you can get more details in my Turkey & Quinoa Harvest Bowl Lunch Prep post), and is the perfect balance of protein, carbohydrates, and fats to keep you fuelled to conquer the rest of your day.

INGREDIENTS:
1 serving Oven Roasted Turkey Breast
1 serving Roasted Onions & Brussel Sprouts
1 serving Crispy Baked Sweet Potatoes
½ cup quinoa, cooked
1-2 cups kale, chopped
1 tbsp Easy Homemade Cranberry Sauce
Salt and pepper to taste
DIRECTIONS:
Place kale in a bowl or storage container
Layer quinoa, sweet potatoes, onions, Brussel sprouts and turkey overtop
Top with homemade cranberry sauce and season to taste
Serve immediately, or pack with you for an easy lunch throughout the week
