Shrimp Summer Roll Lunch Prep

Ah, summer in the city… there’s plenty of sunshine, waaaay too much humidity, and boy… is it ever hot out here, or what!? Days like today really make me feel like never turning my oven on, ever again. I mean seriously, Toronto can’t seem to catch a break when it comes to “perfect summer weather” - it’s either too cold, or feeling like your skin is about to melt off your body.
Which is why… this Shrimp Summer Roll-inspired lunch prep is an (almost) entirely NO-COOK prep. That’s right! If you choose to forgo the rice, you wouldn’t have to turn on any heat whatsoever to whip up the rest of the ingredients necessary for this delicious, flavourful & fresh meal prep. (But, I really love rice, so prepping some was 100% worth it in my books.)
Now, excuse me while I make some delicious Shrimp Summer Rolls and dream of traveling to Southeast Asia….

RECIPES & INGREDIENTS:

Chopped Red Cabbage
Spiralized Zucchini Noodles
* I use this little handy spiralizer here!
Cooked Pacific White Shrimp
* I buy pre-cooked, frozen shrimp so that all I have to do is defrost & enjoy!
Long Grain Rice
*The rice was simply cooked according to the cooking instructions on the back!
Sliced Mango
Sliced Jalapeños
Julienned Carrots
* This takes a skilled hand, but just try to slice as thin as you possibly can, so they’re not too big for the summer rolls!
Cucumber Noodles
* I just used a handheld peeler to create those thick noodle strips - you can grab my favourite one here!
