Ricotta Pear & Almond Breakfast Toast

Eeep - it’s pear season, my friends!!
And, what better way to introduce one of my favourite easy fall-inspired breakfast recipes into your home than with this Ricotta Pear Almond Honey Toast!
Side note: For those of us who have been dreaming of visiting Italy but haven’t been there yet, the ricotta/pear/honey/almond combination is very, very Italian. (You’ll find it everywhere - from gelato shops to bakeries and beyond.) That’s probably because it’s just so damn delicious: the creamy ricotta topped with fresh, crisp pears, nutty almonds and drizzled in sweet honey… I mean… yum!!
Plus, since I’m a huge advocate for having a high protein breakfast, I made sure to amp up the protein content in this recipe to better balance the meal by choosing a low-fat/high protein ricotta cheese (which is less creamy, but you can always feel free to swap for a higher-fat ricotta!) and using Stonemill Bakehouse’s plant-based protein bread, which is particularly high in protein and fibre. (It’s like 9g of protein per 2 slices!!)

INGREDIENTS:
4 tbsp, low-fat ricotta cheese
2 slices, Stonemill Bakehouse Honest Wellness Plant-Based Protein
1 tbsp, almond slivers
1 tbsp, local organic honey
½ fresh bosc pear, thinly sliced
DIRECTIONS:
Toast bread to your desired level. (I prefer a crunchy bread, so I like to double-toast mine.)
Split your ingredients evenly between both slices of bread - starting with your ricotta, then adding the pear slices, drizzled honey and topping with almond slivers.
Enjoy immediately!
