Oven Roasted Turkey Breasts

Turkey is such an underrated source of lean protein, isn't it?
I’ll be honest, I feel like I’ve contributed to turkey’s underrated-ness. I’m constantly buying chicken and chicken breast when it comes to meal prepping and grocery shopping. But, after making this Oven Roasted Turkey Breast, I’m totally ready to change that. Turkey breast is such an incredibly flavorful and affordable source of protein that’s NOT just for Thanksgiving, my friends! So, this is me - vowing to get out of my comfort zone and incorporate more turkey breast into my routine.

INGREDIENTS:
2 skin-on turkey breasts (about 1lb total)
1 clove garlic, thinly sliced
2 tbsp olive oil
1 tbsp lemon juice
¼ cup fresh parsley, chopped
1 tbsp dried oregano
1 tbsp chili flakes
Salt and pepper (to taste)
DIRECTIONS:
Preheat oven to 400°F
Wash thoroughly and pat turkey breasts dry
In a small bowl, mix olive oil, lemon juice, garlic, parsley, oregano and chili flakes until it resembles a marinade
Using your hands, rub the marinade all over the turkey breasts (back and front) until fully coated
Bake on a roasting pan (with wire rack attached) for 30-40 minutes, or until internal temperature reaches 160°F
Let cool on a wire rack for 10 minutes before either carving and placing in storage containers for your meal prep, or serving
