Okay - I need to get something off my chest: I waited TOO LONG for my avocados to ripen, and the result just isn’t as pretty of a macro bowl than I would have initially liked.
But like… come on!
Avocados are just so damn hard to get right sometimes. You could be waiting WEEKS for them to ripen, and then once they’re ready, they literally look perfect for a total of .0002567 seconds before they start to brown and turn too soft.
So, instead of denying myself the ability to share this delicious Fiesta Chicken Macro Bowl recipe with all of you today, I just said “fuck it” to having perfect avocados JUST THIS ONCE.

Now, onto this glorious macro bowl.
This bowl’s got the perfect balance of proteins, carbohydrates and fats that are what literally give “macro bowls” their name and make them such a healthy & sensational meal option. I whipped this up using many of the ingredients found in my Fiesta Chicken Summer Meal Prep, and then tossed in a couple necessary extras (like avocados & a zesty lime wedge) to perfectly round out this satisfying bowl.

⅓ serving Easy Salsa Fresca
1 serving Oven Roasted Lemon & Herb Chicken (skin removed!)
1 serving Spicy Sautéed Peppers & Onions
1 cup chopped lettuce
⅓ cup long grain rice, cooked
⅓ ripe avocado
1 lime wedge
*optional: hot sauce
Throw all ingredients into a bowl or storage container.
Take it with you anywhere & everywhere a delicious, healthy lunch is needed. (Don’t forget to squeeze that lime overtop before you dig in!)
