Easy Salsa Fresca (Fresh Salsa)

Okay… how fresh does this Salsa Fresca look!?

This is a recipe I love to whip up in bulk for a variety of uses - overtop of taco bowls, in salads, as a topping over my eggs in the morning, or even as a dip on its own. Not only is it EXTREMELY low in calories, but it’s also crisp, tangy, and bursting with flavour! Plus, it’s filled with all those good-for-you ingredients, with NONE of the preservatives that other store-bought salsas contain.

And, did I mention it only takes about 15 minutes to make!? Just chop up some fresh grape tomatoes, onions, garlic and parsley and bam - you’ve got yourself a fresh and delicious, multi-purpose salsa that tastes incredible on just about anything. (Seriously - I can have multiple spoonfuls of this, just on its own, and be in complete heaven!)

A quick tip: You can store this Salsa Fresca in a storage container in the fridge for 2-3 days, but it's honestly soooooo delicious, that it usually goes WAY quicker than that!

[Makes 2 servings]

  • 2 cups grape tomatoes

  • 1/2 small onion

  • 1/2 cup parsley

  • 1-2 cloves garlic (depending on how garlic-y you like it)

  • 1 tbsp olive oil

  • 2 tsp lemon juice

  • salt and pepper (to taste)


  • Slice your grape tomatoes in quarters and place in a medium mixing bowl

  • Finely dice your onion, garlic and parsley, and toss in with the tomatoes.

  • Mix in olive oil, lemon juice and seasonings (salt & pepper)

  • Toss everything together until thoroughly combined

  • Enjoy immediately or store in a sealed storage container. Lasts 2-3 days.
