Caramel Pecan Pie Parfait

Oh. My. Goodness.


Is there ever a better flavour combination than caramel and pecans!? (I mean, aside from chocolate & peanut butter… #sorrynotsorry.)


Although this Caramel Pecan Pie Parfait definitely screams “Fall” with that delicious caramel and pecan combo, I’d argue that this recipe tastes great virtually any time of year.


And, can you believe it’s also healthy for you too?


It has a ton of protein from the Greek yogurt and plant-based chia pudding base, healthy fats (and a nice nutty crunch!) from the pecans, along with the best sweet/spicy flavour profile from the spices and caramel drizzle.


My secret weapon?


Chiamigos instant chia pudding.


I’ve been using Chiamigos products for years and absolutely love how easy it is to make instant, flavour-filled, high protein and totally plant-based chia pudding while on the go - without having to wait for hours for the chia to set in the fridge.


I used their Spiced Maple Walnut flavour, which you can view right here.


All you need to do is mix it with your favourite plant-based milk (I used unsweetened cashew milk for this recipe, but you can feel free to use whatever you like), wait a couple of minutes, and enjoy!


Using an instant chia pudding mix is such a time saver if you’re constantly on-the-go (like I am!) and since Chiamigos has four amazing flavours to choose from - Cinnamon Almond Coconut, Crunchy Peanut Butter, Chocolate Banana Nut & Spiced Maple Walnut - you’ll always have so much variety that you will literally never, ever feel bored.


Pro Tip: This recipe actually makes 2 servings, which means you can enjoy one immediately and either share the other with someone you love... or save it for tomorrow so that you can keep those good times going. (My favourite choice, in my opinion.)

INGREDIENTS:


CHIA PUDDING

  • 2 servings Chiamigos Spiced Maple Walnut chia pudding

  • ⅔ cup unsweetened nut milk


TOPPINGS

  • 1 cup greek yogurt

  • 2 tbsp chopped raw pecans

  • 1 tbsp light whipped topping


HOMEMADE CARAMEL

  • 1 tbsp coconut oil

  • 2 tbsp real maple syrup

  • 1 tbsp peanut butter



DIRECTIONS:


  1. In a medium bowl, add your 2 servings of Chiamigos instant chia pudding and nut milk and stir until fully combined. Set aside to allow the mixture to set and thicken.

  2. In a separate small bowl, start preparing your caramel sauce by microwaving together your coconut oil, maple syrup and peanut butter until it has a runny consistency. Mix thoroughly, then set aside and allow to thicken.

  3. Finally, it’s time to assemble! In two small glasses or containers, layer your greek yogurt, chia pudding, a dollop of light whipped topping (if you desire!), and then garnish with pecans and homemade caramel sauce.

  4. Dig in!
