Does anyone else have those days where all you wanna do is dive headfirst into a bucket of chicken nuggets with reckless abandon?
No? Just me, then…
This recipe definitely brings me back to my childhood, when every day after school, my mother would take my sister and me to our local food joint to pick up some chicken fingers and french fries. Then, we would come home, unload half of the plum sauce container into a small bowl, turn on Dave the Barbarian or Spongebob Square Pants and watch cartoons while we polished the entire thing off. (Hey, I didn’t say my childhood was filled with the healthiest of habits, now did I?)
Things look a tad (alright, maybe a LOT) different nowadays, but I’ll admit - I still do have the urge to polish off a plate of chicken nuggets every once in a while.
And so this recipe, my friends, is what happens when two worlds collide.
It’s all of that chicken nuggety goodness, minus the deep fryer, and mixed with the nutrient-packed power of one of my favourite veggies: broccoli. (I do have to mention that it was actually largely inspired by Mia from Gathered Nutrition!)
I truly believe this recipe is bound to bring the kid out of anyone and cannot wait to make it again soon!

1 kg lean ground chicken
3 cups broccoli, chopped into tiny pieces
1 tbsp olive oil
½ tsp sea salt
1 tsp paprika
1 tsp Italian seasoning
1 tsp garlic powder
1 tsp onion powder
½ tsp ground black pepper
1 ⅓ cups Italian-style breadcrumbs
Preheat your oven to 400°F and line a baking sheet with parchment paper. Set aside.
In a skillet over medium heat, sauté the broccoli with the olive oil for about 4-5 minutes, or until soft and bright green. Set aside to cool. ⠀
While the broccoli is cooling, spread your Italian-style breadcrumbs out on a large dish.
In a large bowl, mix ground chicken, egg, and spices (sea salt, paprika, Italian seasoning, garlic powder, onion powder + black pepper) until well combined. Once the broccoli is fully cooled, toss that into the bowl as well and mix until thoroughly incorporated.
Using clean hands, form the mixture into small balls and line them up on the parchment paper. Next, dip each nugget into the breading mixture until all sides are coated and shape into nuggets before placing back onto the parchment paper.⠀
Bake for 20-25 minutes, until nuggets are cooked through and the bottom side is browned. (You can also broil the tops for 2 minutes to brown on both sides!)
Serve with your favourite dipping sauce, and enjoy!
