Valentine's Day Protein Pancakes

Happy Valentines Day, fit fam!

Last week, you guys asked me to share my favourite, drool-worthy Mixed Berry Protein Pancake recipes with you. So, I figured that a day as sweet as Valentine’s Day deserved an even sweeter breakfast companion.

HOWEVER, I will warn you… whether you’re celebrating today with your one true love or not, I can pretty much guarantee that you’ll have a better time with these Mixed Berry Protein Pancakes. (So, cancel your plans immediately - because they’re 100% not as good as digging into these bad boys.)

Here’s why:

1. they're 21 (sexy) grams of protein per serving

2. they're melt-in-your-mouth delicious

3. they use whipped cream & berries in a sexier way than your Valentine ever could

4. they don't talk back

5. just look at how sexy they are

6. they're only 400-ish calories per serving (toppings included!)

7. did I mention how sexy they are!?

And, since I’m all about loving YOURSELF first - this Valentine’s Day, instead of buying chocolates and flowers for your loved ones, treat YOURSELF to these pancakes instead. You’ll be sooooo glad you did, trust me.

Recipe available below!


For the pancakes:

  • ¾ cup egg whites

  • 1 egg

  • ¼ cup 2% Greek yogurt

  • ¼ cup oat flour

  • 1 tbsp almond flour

  • 1 packet stevia

  • 1 tbsp cinnamon (or pumpkin pie seasoning)

  • ½ tsp baking soda

  • a handful of mixed berries

For the toppings:

  • ½ cup mixed berries

  • 1 tbsp homemade roasted almond butter

  • 3 tbsp cool whip light


  1. Whip egg whites in bowl until they form stiff peaks

  2. Combine all dry ingredients in separate bowl (flour, baking powder & spices)

  3. Fold in egg and Greek yogurt to egg white mixture and mix until combined

  4. Mix in dry ingredients

  5. Pour pancake mix into a preheated skillet

  6. Add a couple berries directly into the batter on the skillet and allow to cook for 1-2 minutes, or until bubbles form

  7. Flip and cook other side until golden brown

  8. Serve warm with your favourite toppings


Serves 2, Makes 8-10 pancakes
