Mixed Berry Protein Oats

If you haven’t tried stovetop oats, this is totally a game changer. I used to ALWAYS make my oats using hot water and just waiting for it to cook. It wasn’t until I started adding egg whites (to amp up the protein) that I started using the stove to ensure the eggs were cooked thoroughly - and boy, am I glad I did.

The oatmeal comes out so fluffy, creamy and delicious when combined with the egg whites ad slow-cooked on a stove. (Plus, you seriously don’t even taste the eggs!) Add in a little bit of frozen berries & maple syrup, and you've got yourself one yummy bowl of protein oats.

I N G R E D I E N T S:

  • 1/2 c. rolled oats

  • 3/4 c. liquid egg whites

  • 1/2 c. unsweetened cashew milk (or other non-dairy milk)

  • 1 tsp stevia

  • 1 tsp cinnamon

  • ½ cup frozen mixed berries

  • 1 tbsp maple syrup

D I R E C T I O N S:

  1. Pour oats, egg whites & milk together in a small saucepan and bring to a boil, stirring continuously

  2. Once boiling, take mixture off heat and add stevia & cinnamon

  3. Keep stirring until all ingredients are thoroughly combined

  4. Cover for 2-3 minutes

  5. Remove lid and fluff oats up

  6. Pour into a bowl and top with frozen berries, more cinnamon (if desired) & maple syrup

  7. Dig in!
