Healthy No-Sugar-Added Banana Bread

Ah, banana bread…
It’s the ultimate comfort food: it’s sweet, warm, and oh-so-comforting. Especially this banana bread. It’s sweet enough just the way it is - without any processed sugar added - because everything used to sweeten this recipe comes from natural ingredients, like maple syrup!

INGREDIENTS:
PAM Coconut Oil Non-stick Spray
2 large, Egg
2 Bananas, mashed
1.20 cup, Home-Ground Oat Flour
0.25 cup, Syrups - Maple
0.75 cup(s), Plain Greek Yogurt
0.25 cup, Oil - Olive
1 tsp, baking powder
1 tsp, Leavening agents, baking soda
1 Tbsp (14g), Cinnamon
1 tsp, Vanilla extract
1 tsp(s), Salt
DIRECTIONS:
Preheat oven to 350 degrees F
Combine oat flour (rolled oats blended in a bullet or food processor), baking powder, baking soda, cinnamon and salt in a medium mixing bowl
In a separate bowl, mix together mashed bananas, eggs, Greek yogurt, maple syrup and olive oil until fully combined and smooth
Pour banana mixture into dry ingredients and mix until incorporated
Add in vanilla extract and mix thoroughly
Pour batter into a loaf pan sprayed with PAM Coconut Oil Non-stick Spray
Bake for 45 minutes or until a toothpick comes out clean
Cool before slicing into 8 portions and either serve immediately or store away for weekly snacks
