Chicken Soyaki Macro Bowl

One of my favourite things about my recent trip to Florida (you know, other than going to Disney World and Harry Potter World…) was getting to visit Trader Joe’s and stock up on all my fave spices, sauces, snacks and seasonings.
Yes, I’m one of the few that actually considers a trip to the grocery store THAT exciting.
But, with so many creative, healthy & “wellness-inspired” food products sold at Trader Joes that you simply can’t find at any other grocery store in Canada, your girl just kinda goes bananas.
So, you can bet I stocked up on my all-time favourite Everything But The Bagel seasoning blend - a blend of literally everything good about bagels, all bottled up and ready for you to shake on alllll your food for instant yumminess.
I also stumbled upon this “Soyaki” teriyaki sauce that has everything you need to create yummy Asian-inspired dishes for any meat, poultry, fish, tofu or veggies. Just pour a couple tablespoons in and marinate, stir-fry, use as a dipping sauce or dressing overtop of salads.
So naturally, I had to create a macro bowl using both.
This Chicken Soyaki macro bowl is the perfect balance of protein, carbs and fat. It’s crisp, fresh, flavourful and absolutely delicious - like taking a bite out of a chicken summer roll, without the rice paper.

INGREDIENTS:
[for the chicken]
4 chicken breasts, cubed
2-3 tbsp Trader Joe’s Soyaki sauce
Salt and pepper (as desired)
[for the macro bowl]
1 cup fresh spinach
½ carrot, shredded
½ cucumber
½ cup brown rice, cooked
¼ avocado, sliced
4.5 oz prepared chicken soyaki
½ tbsp Trader Joe’s Soyaki sauce
Sprinkle of Trader Joe’s Everything But The Bagel seasoning blend
DIRECTIONS:
Preheat oven to 350 degrees F.
Place cubed chicken breast into a medium mixing bowl, then pour in Soyaki sauce overtop and mix until thoroughly combined
Season as desired (When using pre-made sauces as a marinade, I like to omit the salt as seasoning, and instead season with just a bit of fresh cracked black pepper)
Bake in oven for 20-25 minutes (or until sides are golden brown), making sure to turn once in the middle
Once chicken is cooked, measure out 4.5oz and set aside
In a salad bowl, lay down a bed of fresh spinach, then toss in shredded carrot, cucumber, and brown rice
Add in your chicken, then top with avocado
Dress with ½ tbsp of Trader Joe’s Soyaki sauce and a sprinkle of Trader Joe’s Everything But The Bagel seasoning blend
Dig in!
