Freshly-baked cookies are the ULTIMATE comfort food. I mean really, there’s nothing like digging into a fresh batch of soft, chewy, melt-in-your-mouth cookies to really soothe the soul. (Are ya drooling yet!?)
Since I’ve been really getting into DIY gifting, I thought I’d whip up a batch of my fave Chocolate Chip & Coconut Oatmeal Cookies to gift to my friends & family this holiday season.
Now, I’m gonna warn ya...these aren’t the healthy, “high protein” version of my favourite cookie recipe. This is the real deal. I don’t know the macros, and quite frankly, I don’t even care. ‘Cause these cookies right here… these bad boys are soul food. (And sometimes, you just gotta indulge in things that just make your soul feel good.)

1 cup old-fashioned oats (not quick)
2 cups flour
1 teaspoon baking soda
1 teaspoon salt
1 cup butter, room temperature
1 cup light brown sugar
3/4 cup dark brown sugar
2 large eggs
1 tablespoons vanilla
1 cup coconut
12 oz. semi-sweet mini chocolate chips
Preheat oven to 350 degrees and line 1-2 baking sheets with parchment paper.
In a large bowl, mix oats, flour, baking soda & salt until fully combined. Set aside.
In a medium bowl, beat the butter for 30 seconds until light in colour. Then, add the sugar, eggs, & vanilla until mixture is smooth and fluffy.
Next, fold the dry ingredients into the wet ingredients. Once incorporated, add the coconut and chocolate chips using a flat rubber spatula until everything is just combined. (No need to over-mix! The chunkier, the better.)
Shape cookie dough into balls and place on cookie sheet.
Bake for 12-13 minutes. Let the cookies cool slightly before removing them from the pan.
Dig in! Makes about 2 dozen cookies.
