Garlic Lemon & Herb Chicken Souvlaki



Ever feel like eating a Greek-style chicken souvlaki, but don’t have any skewers… or a grill? (Just me, then?)


If you thought you needed skewers and a barbecue to whip up some Greek-inspired chicken souvlaki - you were SO wrong! All you need for this recipe is a working oven, a baking tray, and some parchment. (Well… along with a few key ingredients listed below.)


This chicken recipe is great either to prep in bulk for lunch (like in my California Chicken Salad or Greek Chicken Lunch Prep), or to serve warm with some brown rice, Greek salad, pita and homemade Greek Yogurt Tzaziki on the side. It truly is such a versatile recipe that only takes a few minutes to prep, an hour to marinate (while you get sh*t done) and literally 15 minutes to cook.

INGREDIENTS:

  • 1 tbsp(s), Lemon juice, raw

  • 3 tablespoon, Oil - Olive

  • 0.50 cup(s), Plain Greek Yogurt

  • 3 cloves Garlic, minced

  • 1/2 cup fresh parsley, chopped

  • 1 tbsp, Spices, pepper, black

  • 1 teaspoon, Salt

  • 14 ounces, Chicken Breast, Raw

DIRECTIONS:

  1. Using a sharp knife, slice chicken breasts into relatively even, large cubes and set aside

  2. In a medium mixing bowl, combine yogurt, olive oil, garlic, lemon juice, chopped parsley, salt and pepper and whisk together until thoroughly combined

  3. Place raw chicken into bowl and mix until evenly coated on all sides

  4. Cover with plastic wrap and leave in the fridge to marinate for about 1 hour. (Note: You can marinate for longer if you’d like! The longer, the better!)

  5. Preheat oven to 375 degrees F

  6. Place chicken on a baking tray lined with parchment and bake in oven for 15 minutes or until browned slightly

  7. Serve warm, or pack in storage containers for your meal preps for the week
