Goat Cheese-Stuffed Chicken Breast

Ah, goat cheese…
Who else agrees that goat cheese makes everything taste better!? I don’t know if it’s the texture, or that sweet acidity it has to it, but adding goat cheese to something so simple as chicken breast takes this pretty simple-tasting prep into something so spectacular, without needing to add any complicated sauces or seasonings.
Trust me, you’ll be stuffing goat cheese in every meal after you’ve tried this.

INGREDIENTS:
2 large chicken breasts
140 g goat cheese, split into 4 portions
1 tbsp olive oil
Salt & pepper (to taste)
DIRECTIONS:
Preheat your oven to about 350F.
Using a sharp knife, carefully slice chicken breasts horizontally into two, thin equally-sized pieces.
Using a meat tenderizer (or potato masher - if you’re like me and don’t have one), flatten chicken breast pieces until extremely thin (less than 1 cm in height).
Place each portion of goat cheese in the middle of each chicken breast piece and roll up entirely, tucking the ends underneath.
Lay each piece on a lined baking tray and drizzle with olive oil, salt & pepper.
Bake in the oven for about 15-20 minutes per side.
Serve warm, or let cool and place in a storage container for later.
