Pumpkin Spice Protein Pancakes


As much as I hate to admit that the summer is officially over, one of the things I'm most looking forward to about the Fall is all of the warm, delicious & spicy fall FLAVOURS. From cinnamon to apple pie to pumpkin spice - I just want it all.

Speaking of pumpkin spice... I am such a sucker for anything pumpkin-flavoured! Whenever Thanksgiving weekend rolls around, I treat pumpkin spice like they do in those Frank’s Red hot sauce commercials (you know the ones!) - and I just put that sh*t on errrrthang. That's why, today, I whipped up a Fall-inspired version of my favourite protein pancakes recipe to really get me in the Fall mood.


Behold - these deliciously-fluffy PUMPKIN SPICE protein pancakes!! It tastes just like you’re eating dessert, but it's got 30 grams of protein and absolutely NO guilt whatsoever. (Not that anyone should ever feel guilty for eating pumpkin pie for breakfast! Girl, you do you.)

I N G R E D I E N T S:

  • 3/4 c. egg whites

  • 1 egg

  • 1/4 c. pumpkin purée

  • 1/4 c. rolled oats

  • 2 tbsp. coconut flour

  • 1 tsp cinnamon

  • 1 tsp pumpkin pie spice

  • 1 tsp. baking powder

  • 1/2 tsp. baking soda

  • 1 tsp. sugar free vanilla

D I R E C T I O N S:

  • whip egg whites in bowl until they form stiff peaks

  • combine dry ingredients in separate bowl

  • fold in egg and pumpkin purée to egg white mixture and mix until combined

  • add vanilla & spices

  • mix in dry ingredients

  • cook on a skillet & serve with your FAVE toppings!
