Turkey Burgers, Sweet Potato Fries & Easy Summer Salad

Mmm... this is the ULTIMATE summer dinner idea! It has the perfect balance of protein, complex carbs and healthy fats. Plus, it’s just super delicious!

The best part? You don’t even need to cook the Turkey Burgers on a barbecue for them to taste like summertime. Just throw them on a grooved cast-iron skillet to get that same “barbecued” look, or cook them on a regular non-stick skillet. Nothing is off limits here!

Enjoy with a nice, fresh homemade mojito, because it’s all about #balance.

I N G R E D I E N T S:

[for the turkey burgers]

  • 500g extra lean ground turkey

  • 1 egg

  • ½ cup panko bread crumbs

  • salt, pepper & your fave spices

[for the sweet potato fries]

  • 2 sweet potatoes, peeled

  • 1 tbsp olive oil

  • salt, pepper & your fave spices

[for the salad]

  • 3 cups fresh spring mix, washed

  • 1 avocado, sliced

  • 1 cup cherry tomatoes, sliced

  • ½ onion, sliced

  • 1-2 tbsp apple cider vinegar

  • salt, pepper & your fave spices

D I R E C T I O N S:

[for the turkey burgers]

  • Mix all ingredients in a mixing bowl until combined

  • Form into 9 equal-sized patties and cook on a skillet for about 4-6 mins per side

  • Make a cut into one patty to ensure fully cooked before removing from skillet

  • Serve immediately

[for the sweet potato fries]

  • Preheat oven at 375F

  • Slice sweet potatoes into small “fry-like” strips

  • Place “fries” in a mixing bowl and toss in olive oil, salt, pepper & spices

  • Lay side by side on an aluminum foil-lined baking sheet (make sure none are touching each other, or they will get soggy!)

  • Bake for 12-15 minutes each side, turning once

[for the salad]

  • Place salad in a mixing bowl

  • Toss in cherry tomatoes, onions, apple cider vinegar vinegar & seasonings (Note: You can either add the whole sliced avocado in with the rest of the ingredients, or put ⅓ directly on your plate)
