Banana Nut Protein Pancakes



Mmm… the banana-nut combination will ALWAYS be one of my favourites. Whether it’s in muffins, cakes, cookies or pancakes, you can’t go wrong with this killer combo.

These Banana Nut Protein Pancakes are a simple, easy and healthy alternative to my classic high-protein pancake recipe. There’s even less fuss (because you don’t even have to whip the egg whites) and - if you’re a big fan of bananas like me - it’s honestly even more delicious!

TIP: Try prepping these pancakes in bulk, wrapping them in tin foil & placing them in a storage container in the freezer. (They keep really well!) Just reheat however many you need each morning for a no-fuss, healthy breakfast option!

I N G R E D I E N T S:

  • ¾ c liquid egg whites

  • 1 banana, mashed

  • ¼ cup ground oats

  • 1 tsp baking powder

  • 1 tsp vanilla extract

  • 1 packet stevia

  • ¼ cup 0% m.f. plain Greek yogurt

  • 4 almonds, chopped

  • 1 tbsp zero calorie syrup

D I R E C T I O N S:

  • Mash banana in a medium mixing bowl using a fork

  • Add egg whites, vanilla extract and stevia and whisk together until combined

  • Mix in ground oats and baking powder

  • Pour some pancake batter into a heated nonstick skillet & allow to cook on the bottom (Bubbles should form on top.) Then, flip and cook on the other side.

  • Once pancakes have been cooked, top with Greek yogurt, chopped almonds & syrup
