Low-Carb Egg White & Lox Omelette
Honestly, smoked salmon is so underrated! It’s a great source of protein, has a lot of healthy fats & Omega-3’s and is just incredibly versatile. It’s great on sandwiches, in salads, or even for breakfast.

You guys may not know this, but whenever I’m planning on going out for brunch, the first menu item I ALWAYS look for is Smoked Salmon Eggs Benedict with home fries. I don’t know what it is, but it’s just so damn delicious. That melt-in-your-mouth texture of the smoked salmon, sitting on top of a warm english muffin, combined with the runny egg yolks and mixing in with that buttery hollandaise sauce. You can even dip your home fries in that whole delicious mess. Ugh! I’m getting hungry just visualizing it now.
So, in honour of my favourite go-to brunch dish, I’ve decided to share a (much) healthier, low-carb version with all of you - my Egg White & Lox Omelette!
What’s great about this is that you can always turn this into a great brunch idea with friends by making a “build-your-own omelette” bar! Just whip up your eggs (or egg whites!), and then have all sorts of toppings available on your table - like smoked salmon, sliced onions, greek yogurt, shredded cheese, tomatoes, scallions & all your other favourites.

I N G R E D I E N T S:
1 cup liquid egg whites
1 cup raw spinach
.25 cup 0% plain Greek yogurt
1 tsp lemon juice,
.25 cup sliced onions, raw
2.5 oz smoked salmon
salt, pepper & spices
D I R E C T I O N S:
Cook your egg whites on a nonstick pan over medium heat
Season with salt, pepper & your favourite spices
Lay cooked egg whites over a bed of fresh spinach
Top with smoked salmon & sliced onions
NOTE: Although I topped my egg whites with the smoked salmon and onions, you can fill your omelette with these toppings instead!
Garnish with a dollop of greek yogurt, some lemon juice & some more spices
