Roasted Red Pepper & Turkey Bacon Rice Cakes
Since I’m starting my clean bulk phase, I’ve been trying to come up with really delicious, healthy snacking alternatives that I can grab whenever I’m hungry throughout the day, and this one just sorta... happened. I was trying to make a sweet rice cake, but then I saw turkey bacon in my fridge. So, I threw caution to the wind and came up with this savoury rice cake instead! And boy, am I glad I did. This was SO good, and that little kick of spice is my EVERYTHING! (Recipe & macros available below.)

INGREDIENTS:
2 rice cakes of choice
1/4 c. plain Greek yogurt
1/2 c. raw kale, chopped
4 slices reduced fat turkey bacon
2 oz. roasted red peppers, sliced
1/4 tbsp olive oil
1 clove garlic, chopped
a squeeze of lemon juice
red chilli flakes
other spices & seasonings
DIRECTIONS:
fry up the turkey bacon to your preferred level of “crispiness”
mix your sliced roasted red peppers with 1/4 tbsp of olive oil and chopped garlic clove (season as necessary)
spread your plain Greek yogurt on top of each rice cake
season the Greek yogurt as you like (I like a bit of salt, black peppercorns, garlic powder & a few dried chilli flakes)
top your rice cakes with chopped kale, crispy turkey bacon and roasted red pepper mixture
squeeze a bit of lemon overtop and some more chilli flakes for an added kick & enjoy!
