California Chicken Salad



I’ll be honest - this salad was sort-of a happy accident.

Originally, I was trying to go for a more Mediterranean Greek-inspired salad. However, after I had finished baking my Garlic Lemon & Herb Chicken Souvlaki, I realized I was out of cucumber... and red onion… and feta. (Okay, I wasn't prepared at all!)

All I really had in the fridge was some brown rice, diced cherry tomatoes and an avocado. So, instead of panicking, I decided to throw it all in and call it a day. (Or, a California Chicken salad…)

The reason behind its name is because digging into this salad truly does remind me of my trip along the California coastline a few years back - everything was warm & sunny, and there was always, always avocado in my salad. Honestly, I don’t remember a menu in any California restaurant that didn’t have avocado. It’s a beautiful thing!

Although not entirely Californian by nature, this salad is fresh, flavourful and filled with good-for-you foods that will nourish your body from the inside out. (And it makes a pretty amazing quick & easy lunch prep!)

Tip: For a true Cali-style salad, try substituting the brown rice for quinoa and adding in a couple citrus slices or berries for a burst of flavour.

INGREDIENTS:

  • 2 cups Spinach

  • 1 serving Garlic Lemon & Herb Chicken Souvlaki

  • ⅓ cup Cherry Tomatoes, diced

  • ¼ medium Avocado

  • ¼ cup Brown Rice, cooked

  • 1 tbsp Balsamic Glaze

  • Salt and pepper (to taste)

DIRECTIONS:

  1. Lay spinach in a bowl

  2. Add your chicken, rice, avocado, and tomatoes

  3. Drizzle with balsamic glaze and season with salt & pepper

  4. Enjoy immediately!
