Easy High Protein Breakfast Sandwich



Okay, so I'll be honest here - I absolutely love to sleep in. And luckily (on most days), I can.

However, if I have a meeting or another responsibility to get done in the morning and can't find a way to take my breakfast with me, I'm either guaranteed to be late... or my breakfast isn't going to get eaten.

Now, I'm NOT a fan of wasting breakfast... but I AM a huge fan of breakfast sandwiches. And since I'm not about to sacrifice my nutrition for convenience, lately these bad boys have become my go-to breakfast to eat in a hurry. Because sometimes, you just gotta grab your eggs and go - ya know? (Recipe details below!)

INGREDIENTS:

  • 1 cup liquid egg whites

  • 2 slices turkey bacon

  • 2 slices whole grain bread

  • a handful of spinach (or fresh lettuce)

  • 1 tbsp light mayo

  • 1 tsp chilli paste, chilli oil or chipotle sauce

  • salt, pepper & your fave spices

DIRECTIONS:

  1. Toast your bread (I like mine double-toasted so that it's extra crunchy... does anyone else do that!? 😋)

  2. Pour your egg whites into a small, heated pan

  3. Mix mayo and chilli/chipotle sauce to create your own homemade chipotle mayo

  4. Spread mayo on toasted bread

  5. Lay down spinach (or lettuce) on one of your slices of toast

  6. Once your eggs are fully cooked, fold like an omelette then fold it again

  7. Remove eggs from pan and stack on top of your spinach

  8. In the same pan, cook turkey bacon until it reaches your desired crispiness

  9. Remove from pan and lay overtop of eggs

  10. Place final layer of bread on top & flip immediately so that the bottom slice doesn't get soggy from the heat of the eggs.

  11. Pack up with some paper towel to soak up the moisture, or enjoy immediately!
