Sautéed Kale & Mushrooms w/ Balsamic Glaze



I absolutely love kale. Kale chips, kale salad, kale smoothies - you name it. It’s such a versatile, flavourful, and crunchy leafy green that’s tasty no matter how it’s cooked.

Recently, sautéed kale has become a bit of an obsession for me, and I’ve tried to experiment with it more in my home cooking. Paired with the sweetness of a balsamic glaze, this Sautéed Kale & Mushrooms mix is the perfect side for any fall-inspired dish.

INGREDIENTS:

  • 4-5 stalks kale, chopped

  • 2 cups cremini mushrooms, chopped

  • 1 onion, chopped

  • 1 tsp olive oil

  • 1 tbsp balsamic glaze

  • Water (as needed)

  • Salt & pepper (to taste)

DIRECTIONS:

  1. Heat up a medium frying pan with 1 tsp of olive oil. Throw in chopped onions and saute until soft.

  2. Add mushrooms and mix thoroughly. Allow to reduce. Once oil has been used, add water as necessary.

  3. Once mushrooms and onions are soft and fragrant, throw in chopped kale one handful at a time. Stir together and allow kale to wilt and reduce. Continue until all the kale has been added. (About 5 minutes)

  4. Season with salt & pepper as desired, then add balsamic glaze. Mix until thoroughly combined.

  5. Serve warm, or let cool and place in a storage container for later.
