Vegetarian Spicy Lentil, Carrot & Kale Soup



All the vegetarians in the house, put your hands up!

Since fall is the perfect weather for making comfort food like hearty soups, stews and chilis - I always love to experiment with new flavours every time this season rolls around.

But whether you’re a vegetarian, or just trying to get your vegetables in, this is a soup that anyone who loves spice will absolutely fall in love with. (Seriously, it’ll warm you up from the inside out!)

Note: This Vegetarian Spicy Lentil, Carrot & Kale Soup can almost be considered a “stew” for how chunky and flavourful it is, but we’ll just call it a soup for name’s sake. ;)

INGREDIENTS:

  • 4-5 heirloom carrots (depending on size), finely chopped

  • 1 cup grape tomatoes, sliced

  • 3-4 stalks kale, chopped

  • 1 onion, diced

  • 1 can lentils

  • 1 cup tomato sauce

  • 3-4 cups water (depending on how chunky you like your soup)

  • 2 tbsp chilli flakes (reduce to 1 tbsp if you don’t want it too spicy!)

  • 2 tsp chilli seasoning

  • 2 tsp paprika

  • 2 tsp garlic powder

  • 1 tsp oregano

  • 1 tbsp olive oil

  • Salt & pepper (to taste)

DIRECTIONS:

  1. In a large pot set to medium heat, add in olive oil and onions. Sauté until onions are soft and fragrant.

  2. Add in your chopped carrots and allow to become soft.

  3. Once carrots and onions are nice and soft, toss in your grape tomatoes and stir thoroughly.

  4. Add in tomato sauce, water, lentils and seasoning (chilli flakes, chilli seasoning, paprika, garlic powder, oregano, salt & pepper). Cover pot and allow to come to a boil. (About 5 minutes)

  5. Once boiling, lower heat, stir thoroughly and allow to simmer. Continue to stir occasionally for about 20-30 minutes.

  6. Throw in chopped kale one handful at a time. Stir into soup and allow kale to wilt and reduce. Continue until all the kale has been added to the soup. (About 5 minutes)

  7. Serve warm, or store entire pot in fridge once soup has cooled for about 1 hour.
