Egg Whites on Toast w/ Sweet & Spicy Slaw



Today's COLOURFUL breakfast is definitely a new favourite - a warm egg white omelette on ancient spelt toast topped with a sweet & spicy slaw, sliced cherry tomatoes, fresh parsley & lime juice. Sooo fresh, healthy and delicious!

Personally, I LOVE adding as many colours to my meals as possible - not only for the health/nutrient benefits, but also because it just looks so damn good! (Perhaps the expression is true - it IS better to eat with your eyes!)

I N G R E D I E N T S:

  • 2 slices Ancient Spelt toast

  • 1 cup liquid egg whites

  • ½ cup coleslaw mix

  • 1 tbsp lime juice

  • 1 tsp olive oil

  • 1/2 tbsp honey

  • 1/2 tbsp dijon mustard

  • 1 tsp hot sauce

  • Sprig of fresh parsley

  • 4 cherry tomatoes, sliced

  • Salt and pepper (to taste)

D I R E C T I O N S:

  • In a small bowl, mix lime juice, oil, honey, hot sauce & dijon mustard until combined

  • Drizzle mixture over coleslaw and toss together, adding some salt & pepper to taste

  • Toast bread and place on plate

  • Cook egg whites in a heated nonstick skillet

  • Once fully cooked, lay egg whites overtop of toast

  • Top with slaw, cherry tomatoes & parsley

  • Season with salt & pepper as needed
