Chocolate Protein Pancakes


There's no better #MondayMotivation than choosing a healthy breakfast you absolutely LOVE to really start your week off right! These Chocolate Protein Pancakes can also be cooked as crepes, if you prefer. Pour some melted, natural peanut butter, sugar free syrup or fresh berries on top for a perfect, healthy & delicious breakfast.


I N G R E D I E N T S:

3/4 c. egg whites

1 egg

2 tbsp. 0% m.f Vanilla Greek yogurt

1/4 c. rolled oats

2 tbsp. coconut flour

1 tsp. baking powder

1/2 tsp. baking soda

2 tbsp. cocoa powder

1 tsp. sugar free vanilla

blueberries (optional)

D I R E C T I O N S:

  • whip egg whites in bowl until they form stiff peaks

  • combine dry ingredients in separate bowl

  • fold in egg and Greek yogurt to egg white mixture and mix until combined

  • add vanilla

  • mix in dry ingredients

  • cook on a skillet & serve with fresh blueberries or your fave toppings
